Blog

A quick update as I haven't updated in a while due to my computer dying but thanks to Alan- its fixed now. Yay! Turns out it was my stupid wireless keyboard causing my hard drive to fail and now I have a new hard drive and the old one is going to get destroyed. Can't believe I'm going to be losing all my files!

Tuesday 15th March- today is Yan and Alan's leaving do so we all went out to Harold's Cross Greyhound Racing. We had dinner, few bets and drinks. I won only once out fo the 11 races. Boo! But it was great fun!

Wednesday 16th March- Romeo and I went to the park and had a picnic before walking half way back to his house from Tallaght! Cooked steak for dinner.

Friday 18th March- Celine's funeral at Saggart. Went to Brown's Barn afterwards for some food and drinks with staff from David Marshalls then headed into town to The Secret Bar for more drinks!
Saturday 19th March- Went to the cinema in Dundrum with Romeo and watched Battle Los Angeles which wasn't too bad. Came home and made Lassaka to eat tomorrow for dinner. I'm feeling so sick with a dry cough and dizzy spells. >_<

Lassaka- Lasagne/ Moussaka

My first attempt on making Lassaka. I don't know does this even exist but its crossed between a lasagne and moussaka- my 2 favorite dishes that are similar so I thought I'd combine them! It was really easy to make and ingredients wise- just use whatever you like eating!
I actually made this the night before as it will taste  better the day after. Hope you will enjoy this!



Ingredients I used:
2 Medium Aubergines- sliced into 1cm
Mince beef
1 large onion- diced
Mushrooms- quartered
Lasagne sheets
Lasagne Tomato Sauce
Bechamel Sauce (white sauce)
White cheese/ Parmesan cheese

Rub salt on aubergines to take away the bitterness then place on a tray lined with tin foil and roast in oven for 20mins. Saute mushrooms and onions for few minutes then add mince and cook until mince is no longer pink. Add a pinch of salt, pepper and mixed herbs (optional). Add lasagne red sauce and simmer for few minutes.
Line and grease lasagne tray and start layering with aubergines first, mince, lasagne sheet, bechamel sauce. Repeat until you end with lasagne sheet. Pour bechamel sauce all over and sprinkle cheese on top. Sprinkle Paprika (optional) so it will brown nicely. Slice a couple of tomtatoes and place on top of cheese for decorations. Set Gas Mark 5 and bake for 45mins. Leave to aside to set for 10 minutes.
Can be served straight away or left til the next day.
If you are leaving it for the next day, cover it with tin foil and bake in oven for 20mins Gas Mark 5 then without the tin foil for another 5-10 minutes. Enjoy!

PS- this was delicious and really easy to make!!
